1 cup Agave Nectar (your brand choice)
2 envelopes unflavored gelatin
1 tsp pure vanilla extract
6 tsps cold water
1/4 tsp salt

Directions:
Dissolve gelatin in water and heat for 30 seconds in microwave. Pour gelatin/water mixture, vanilla and agave into mixer bowl. Add salt. Beat for 10-15 minutes until thick. "Flour" a cookie sheet with confectioners sugar. Pour marshmallows on cookie sheet. Let it set and cut into squares. I poured mine onto parchment paper and it tried to stick a bit so try the confectioners sugar. The recipe calls for flour but I am gluten free and I didn't want to use the gluten free flour since it has a distinct flavor.
To make Rice Krispy Treats, melt a 3/4 stick of butter in a pot. Add your agave marshmallows into the butter and heat until melted. Add 8 cups of your favorite rice cereal ( I use Envirokids GF Koala Krisps). I mixed everything in a large bowl and sprayed a glass "lasagna" dish with GF cooking spray (Pam) pressed it in and let it set up in the fridge (we couldn't wait!) Flip them out when they are set up and cut them into whatever shape you like. THEY ARE YUMMY!!!
